Migas Esta Mi Amiga!: A Recipe

Still raining . . .
 
I can't wait to finish up with my Family Table series, but for now I will just give you another recipe!
 
I had never tried this, until my sweet friend & mentor Kenda made it up as a quick lunch for us while I was over for a visit!  I am now hooked on this Texas treat!  I have seriously eaten it about every other day for the last week and a half!  . . . And guess what we had for breakfast this morning!?  MIGAS!!
 
Alright, so I am going to give you the very simple version of this recipe.  I usually make it like this because let's face it, I'm a simple girl, ESPECIALLY when it comes to food!  Then, I'll add a link to a miga recipe that is a little more colorful!
 
Simple Migas:
 
 
 
Ingredients
 
5-6 eggs
shredded cheese (amt to your preference)
tortilla chips (a couple handfuls)
salsa
* You can also add a bunch of fresh vegetables!  I'd go with peppers of all colors and tomatoes if you have them on hand (which I didn't)!
 
Directions
 
If you are planning to add vegetables, you will want to throw them on a skillet first!  I'd put a little butter or olive oil in there with 'em!
 
Once you finish with the vegetables, scramble yourself some eggs.  Once they have cooked a little bit, add your shredded cheese.  Finally, just before they are finished cruch up a couple handfuls of tortilla chips and mix 'em in! 
 
 
 
YUM!  This is great for breakfast or lunch!!  Serve with salsa!
