Recipe: Colorful Stuffed Peppers



If you are wanting to eat in-season, here is a great summer recipe!

Colorful Stuffed Peppers!

Ingredients

1 cup brown rice
1lb hamburger
1 cup salsa of your choice
1 cup tomato sauce
2 ears of corn off the cob
4-6 green peppers
1 tomato
shredded cheese

Directions

Cook brown rice on stove top according to package instructions. 
Brown 1 lb of hamburger.
Boil corn, then cut off the cob once it is cooked.

Mix together rice, salsa, tomato sauce, hamburger, and corn.  Salt to taste.

Cut the tops off of the green pepper, and remove the inside stuff!
(I like to rinse mine out so I'm sure to remove all the little seeds.)

Stuff the rice mixture into the peppers.
Bake at 350 degrees for 10-15 minutes.

Remove tops.
Sprinkle with cheese and tomato peices.
Replace tops.

Enjoy!

We like to eat this with tortilla chips!
