Cooking with Kenda: Chicken Salad & A WINNER


Hi there friends!  Ok, first of all, I have not forgotten about the giveaway!  Like many of you, I am anxiously awaiting to be told who won!  I haven't heard back from the lady who put the whole giveaway together yet, but I am sure the announcement will be real soon!  Hopefully the anticipation makes it that much more sweet for the winner! :) . . . HA!!  As I am writing this post, I was contacted with the winner!

For today, I thought I would give you another recipe! 

I have started meeting up with my good friend Kenda, and her daughter-in-law Brittney on Tuesdays.  It is the perfect Titus 2 picture!  We spend time talking about our babies, learning to sew, and eating some of Kenda's wonderful lunches!  This past week Kenda made chicken salad!  Although I am usually not fan of chicken salad . . . or celery . . . or fruit mixed with meat . . . this recipe is TASTEY!  Despite all of these things I don't normally like, the  combination has become one of my favorites now!  I think it might be the fact that we used ranch as the base instead of mayo! 


Chicken Salad

Ingredients (for 6-8 servings):

3 grilled chicken breasts seasoned with Lowry's
1 cup chopped celery
1/2 cup pecans
1/2 cup grapes sliced in half (optional)
ranch dressing 1 cup (could use more if you prefer!)
dill Weed to taste
celery seed to taste
salt and pepper to taste

Mix everything together.  Serve on toasted potato bread with chips! :)
